Marinate onions, peppers & skirt steak in desired fajita season (packaged or some beer, lime juice & spices such as cayenne or jalapeño pepper, a dash of oregano, several cloves of garlic, cumin, etc.) & store in freezer bag in cooler. Stir fry mixture in a cast iron skillet of fire. Heat tortilla shells, add desired toppings such as lettuce, tomatoes, cheese & sour cream.
