  1. 1 cup pineapple juice
  2. 1/2 cup (4 ounces) light rum, if desired
  3. 1/2 cup (4 ounces) blue curaƧao
  4. 1/2 cup (4 ounces) cream of coconut (not coconut milk)
  5. 10 to 12 ice cubes
  6. Fresh cherries or maraschino cherries with stems, if desired
  1. Chill martini glasses in freezer several hours before serving.
  2. Place all ingredients except cherries in blender. Cover and blend on high speed about 45 seconds or until smooth.
  3. Pour pineapple mixture into glasses. Garnish with cherry.
  4. Dress up this drink by dipping the rims of martini glasses in pasteurized egg whites and then in shredded coconut.
