Eggnog Pudding…

Eggnog
 
Ingredients
  • 3 Eggland's Best Eggs
  • 1 large package instant vanilla pudding mix (can substitute sugar free mix)
  • ½ gallon milk (can substitute low-fat milk)
  • 1 tsp coconut extract
  • 3 tablespoons sugar (can substitute Splenda or Equal for sugar-free option)
  • 1 pint half & half (can substitute non-fat)
  • 8oz. container of Cool Whip (can substitute light Cool Whip)
Instructions
  1. In a large bowl, mix instant pudding according to box directions. Add coconut flavoring and sugar
  2. Using wire wisk, beat Eggland's Best Eggs until well beaten. Add remaining milk and half and half to eggs and blend well
  3. Add egg mixture to pudding and mix until fully incorporated
  4. Fold in Cool Whip
  5. Chill until serving time (approximately 2 hours)
